Department of Food Hygiene and Technology

The mission of the Department of Food Hygiene and Technology at the Faculty of Veterinary Medicine is to provide research, education and dissemination of knowledge at the highest level in the area of meat hygiene and inspection, milk hygiene, food technology, zoonoses, and veterinary public health; to educate and develop undergraduate and graduate students for leadership roles in the food industry, academia and government.

Our graduate program offers master of science (MSc) and doctor of philosophy (PhD) degrees. Graduate students receive in-depth training in the core disciplines of food safety, food microbiology, food processing, and veterinary public health.

Research is facilitated through core disciplines as well as following collaborative multidisciplinary signature areas: Microbial Food Safety, Veterinary Public Health, as well as underlying cross-cutting research themes of Food Quality and Food Preservation.

Our staff, undergraduate and graduate students are at the forefront of:

  • Identifying and characterization of foodborne bacteria and pathogens.
  • Understanding of food safety and Veterinary Public Health
  • Developing new products of animal origin for human consumption
  • Developing food preservation methods to expand the available food supply

Laboratories

The Laboratories of the Department of Food Hygiene and Technology aim our students to gain experience by testing the theoretical knowledge learned in the lessons in a laboratory environment.

The laboratories of our department are categorized as education and research laboratories. Our research labs are listed as follows:

  1. Molecular Food Laboratory
  2. Food Microbiology Laboratory
  3. Food Toxicology and Serology Laboratory
  4. Chemistry Laboratory

In addition, experiments on the research topics in milk hygiene and dairy products are conducted in our "Milk Processing Unit."
